If there's one country I don't like that's Greece.
Have you ever been suggested to visit Zagorochoria in Pindus, maybe staying in Papigko or Megalo Papigko village and visit the Vikos Gorge which is near? Deepest of it kind. The river is good for canoe-kayak. Autumn is the best period to see the colour changing pallet of nature from green to copper red. According to your type of trips you like, i think that this would be a place that you would easily include in this top
